"Singara" - The most popular, available and affordable snack in Rajshahi

Introduction to "Singara":

In English and other languages Singara/Shingara is referred as samosa. Even in India in several states singara/shingra is known as and mentioned as samosa. But in Bangladesh singra/shingra and samosa are two different snacks and nutriment . Especially Singra/Shingra dough is flaky and Samosa dough is crispy. they're different in their shapes and tests. Singara is looks mostly sort of a triangular ball and samosa seems like a clear triangular. Specially to form singara/shingara potato may be a must of the ingredients.


Origin and Popularity of Singara:

Singara/shingara may be a stuffed pastry and a well-liked snack in South, Southeast, Central and Southwest Asia, the Arabian Peninsula , the Mediterranean, the Horn of Africa, North Africa and South Africa . It generally consists of a fried or baked triangular, pastry shell with a savory filling, which can include spiced potatoes, onions, peas, coriander, and lentils, or lever of beef or chicken or lamb(kalija singara/shingara). the dimensions and shape of a singra, also because the consistency of the pastry used, can vary considerably, although it's mostly a triangular ball. Singara are often served with chutney generally as an appetizer.

In English the word "samosa"(which is referred as singara in Bangladesh) are often traced to the Persian word sanbosag. The pastry name in other countries also derives from this root, like the crescent-shaped sanbusak or sanbusaj in Arab countries, sambosa in Afghanistan, samosa in India, samboosa in Tajikistan, samsa by Turkic-speaking nations, sambusa in parts of Iran and chamuça in Goa, Mozambique and Portugal. While they're currently mentioned as sambusak within the Arabic-speaking world, Medieval Arabic recipe books sometimes spell it sambusaj.


Singara has been a well-liked snack in Bangladesh also as in South Asia for hundreds of years . it's believed that it originated in Central Asia (where they're referred to as samsa, before the 10th century. Iranian historian Abolfazl Beyhaqi (995-1077),  has mentioned it in his history, Tarikh-e Beyhaghi. it had been introduced to the Indian subcontinent within the 13th or 14th century by traders from the region.

Singara was delivered to India, where it's so famous, by Muslim traders and soldiers. Small, crisp, mince-filled singaras were easy to form around campfires during night halts, then conveniently packed into saddle bags as snacks for subsequent day’s journey.

Singara is typically fried deep to a golden brown colour, in oil . it's served hot and is usually eaten with ketchup or chutney, like mint, coriander or tamarind.Usually singaras/shingaras are eaten during the tea time as a tiffin in Bangladesh. It also can be prepared as a sweet form, instead of as a savory one. Singaras are often served in chaat, along side the normal accompaniments of yogurt, chutney, chopped onions and coriander, and chaat masala.


"Singara" in Rajshahi:

"Singara" is found here and there in Rajshahi. But tastes and preparation styles is not same everywhere. In this post subsequently I will mention some street vans and shops whose singaras are good in tastes and who are famous for selling singara.

1. Famous 2(two) Takar "singara" in Nawdapara (amchattar):

          


Nawdapara(amchattar) is a center place of Rajshahi. Beside amchattar this shop is situated. This shop has been running for 09 years. Here the price of singara is only 2/=. From the inception of this shop the price remains same. But the taste is so good compairing with price. Demand of this singara is so high. For this over crowded situation remains here all time. You may have to wait for a long time to buy singara fro here.

2. Kaliza Singara of Haji:



Kaliza Singara of Haji restaurant is not a street food. But it is so good that you should not miss it. In fact, two restaurants –Haji and Tripti, of Laxmipur in Rajshahi city have commendable Kaliza Singara available at Tk10 only. 

They also get sold out within 12:00-1:00pm.

Singara of Biren Restora:



Biren restora is very famous for its singara and it has gathered a huge popularity from 54 years. This singara is made with mixture of mutton and boiled potatos. This singara costs only 5/=.

The location of biren restora is aloker mor(in front of chamber of commerce building). This restora remains open from 7am to 10pm.


Recipe and preparetion of Singara/Shingara :

Prep Time: quarter-hour

Cook time: 1 hour

Yield: 12 Singara


Ingredients :

- 1 cup of flour

- ½ teaspoon salt

- 2 tablespoons oil

- ¼ teaspoon black cumin/kali jeera (optional)

- Water

- 3/4 cup of sugar


Stuffing:

- 4 large boiled potatoes (peeled and diced)

- 1/2 teaspoon cumin

- 1 medium onion sliced

- ¼ teaspoon turmeric powder

- 3 green chillies chopped

- Fresh coriander leaves chopped

- Salt to taste

- 2 tablespoons oil

- Oil for deep frying


Instructions:

1. to form the dough, mix salt and water together and dissolve the salt. Then mix flour, oil and therefore the salty water together and make smooth but a touch bit hard dough. Cover the dough with cling wrap and let it set. The dough must sit for a minimum of 20 minutes.

2. Heat the frypan and pour the oil within the pan. Add the cumin seeds and when it crackles, add onion. When the onion is transparent, add one by one chillies, turmeric powder, potatoes and salt to taste. Stir them until tender. Afterwards, add the freshly chopped coriander leaves.

3. Remove the pan from the stove and let it cool.

4. Take the dough and knead it for 1-2 minutes and divide into 6 equal balls.

5. Roll each dough into an oval shape and cut each oval in half.

6. Take half oval and make a cone and seal the sides with water.

7. Fill the cone with the potato stuffing and seal the sting with water again. it'll appear as if a triangle shape.

8. Repeat 12 times. you'll have 12 singaras altogether.

9. Heat the frypan with the oil for deep fry. When oil is prepared , place the singaras within the pan few at a time. Don’t make the pan crowded. Keep space within the pan for the singaras to float around.

10. Fry them until crispy and brown. Serve them hot. Enjoy.

"Rahat Burger" - The most selling burger in Rajshahi

This article is about a dish named Hamberger which is usually familiar as Burger. This food is popular over the world.In this article at I will try to introduce what it is  and when or why it is originated. Then I will focus on my targeted topic.

Introduction to Burger:

Burger consists of one or more cooked patties of meat, usually beef but mutton or chicken also can be used, placed inside a sliced bread roll or bun. The patty could also be pan fried, grilled, smoked or flame broiled. Hamburgers are often served with cheese, lettuce, tomato, onion, pickles, bacon, or chiles; condiments like ketchup, mustard, mayonnaise, relish, or a "special sauce", often a variation of Thousand Island dressing; and are frequently placed on benniseed buns. A hamburger topped with cheese is named a cheeseburger.


The term "burger" also can be applied to the meat patty on its own, especially within the uk , where the term "patty" is never used, or the term can even refer simply to hamburger . Since the term hamburger usually implies beef, for clarity "burger" could also be prefixed with the sort of meat or meat substitute used, as in beef burger, turkey burger, bison burger, or veggie burger.


Hamburgers are sold at fast-food restaurants, diners, and specialty and high-end restaurants (where burgers may sell for several times the value of a fast-food burger, but could also be one among the cheaper options on the menu). There are many international and regional forms of the burger.


History of Burger:

As versions of the meal are served for over a century, its origin remains ambiguous.The favored book The Art of Cookery Made Plain and straightforward by Hannah Glasse introduce a special recipe in 1758 as "Hamburgh sausage", which suggested to serve it "roasted with toasted bread under it". an identical snack was also popular in Hamburg by the name "RundstĂŒck warm" ("bread roll warm") in 1869 or earlier,and supposedly eaten by many emigrants on their thanks to America, but may have contained roasted beefsteak instead of Frikadeller. Hamburg steak is reported to possess been served between two pieces of bread on the Hamburg America Line, which began operations in 1847. Each of those may mark the invention of the Hamburger, and explain the name.


There is a regard to a "Hamburg steak" as early as 1884 within the Boston Journal.[OED, under "steak"] On July 5, 1896, the Chicago Daily Tribune made a highly specific claim regarding a "hamburger sandwich" in a piece of writing a few "Sandwich Car": "A distinguished favorite, only five cents, is chopped steak sandwich, the meat that is kept ready in small patties and 'cooked at the time of waiting' on the gasoline range.

Actually Rajshahi is renowned as city of education. There are different large educational institutions are situated here. For this students have to stay in this  city. We know that usually students or young people like to eat fast food. Since Burger is a fast food item so it is so much popular among young generation. By emphasizing this increasing demand there are different types of permanent an floating shops or vans have been established around the whole rajshahi city. Here you can find different types of burger. 


I will get you informed again about some burger forms or burger shops in Rajshahi city. But today I will review only the best selling burger point/shop of Rajshahi named "Rahat Burger".


"Rahat Burger" - The best selling burger in Rajshahi:



This is the first street burger point of Rajshahi according to the speech of its owner. It is the cheapest burger shop in the Rajshahi city also. The owner of this shop is a middle age women lady. She is a hard working women. She leads her family. She started this business about 05 years ago. Before starting this she worked different types works for helping her family. At first she ran this burger shop alone. But by the course time the popularity of her burger began to increase. Now she can not handle all works(such as making burger, serving, taking money etc.) alone. All of her family members(husband,son,daughter) help her to run his business properly. Everyday she sells 300-400 pcs burgers, surely the best sell around Rajshahi city.

There are different types of Burgers are found here. These are-

  • Shamikabab burger - 25/=

  • Chichen Burger - 100/=
  • Shrimp Burger - 90/=
The taste all of her burgers are very good comparing with price. You have to wait for a long time if you want to take taste of her burger.

It is situated in the heart-point of Rajshahi city. If you want to taste this burger then at first you have to go to shaheb bazar zero point.There you will see the "Shaheb bazar Boro(big) Maszid(mosque)". There you will find it in the south-eastern corner of the mosque. 

This shop is opened everyday from 3 pm to 10 pm.

Students Food Habits in The City(Rajshahi) of Education

 

Introduction

We all know that Rajshahi is one of the most beautiful city of Bangladesh .This place is more populer for its mango which is the best than the other places of Bangladesh .There are a lot of students study in this place at RUET, RU and Rajshahi College(RC).In RU (Rajshahi University ) there are almost 36000 students study in here . At Ruet there are almost 13000 students and about 35000 in RC.In this regard I will surely say that the food habit of the students is different and significant. In this post I will discuss the different food habit of students of different institutions sequentially.

Places where the students generally eat .

There are total 17 halls in this University and eash and every hall have their own dining room where more than 20000students can eat their lunch and dinner every day. For lunch every student have to spend 24 taka and for dinner every student have to spend only 18 taka everyday .But the quality of those foods are totally bad . You can eat there unlimited rice and dal but you have to eat only one pice of fish or meat or egg.More than hulf of the total students of here eat in the hall of this university .

Old Dhaka Style Tehari(Aromatic Rice Cooked with Beef or mutton) in Rajshahi

 



History of Tehari:

Tehari may be a yellow rice dish in Awadhi cuisine. It is such a cuisine in which Spices are added to cooked rice for flavor and color.

Actually it was originated or developed for the Hindu bookkeepers of the Muslim Nawab rulers in South Asia.

Tehri became more popular during the Second war when meat prices increased substantially and potato became the favored substitute in biryani.Still, after the meat prices settled, the dish remained popular because it began to be prepared with meats, green peas and potatoes and there's also variation with mixture of these three ingredients.

Reason Of popularity of Tehari:

Tehari is a significant Bangladeshi dish that packs a pleasing punch contributed by green chilies and curried beef. Bangladeshi tehari is predominantly a rice dish that's always made with beef. Generally authentic tehari is cooked with mustard oil.

The difference between biryani and tehari lies within the cooking method and therefore the fat content. For Biryani, rice, meat and potatoes are cooked separately mainly in ghee or drawn butter then layered during cooking. On the opposite hand, tehari is cooked with oil and therefore the cooked beef is added to rice and mixed together while cooking.

Tehari is full of flavors. Once you are trying , there'll be no turning back. I don’t need special occasions to organize this aromatic rice made with beef curry. Also, this is often my attend rice item once I have visitors over during a short notice. Usually, I even have shami kababs within the freezer and if I’m in luck, I’ll probably have some chutneys within the refrigerator. All i want is cook tehari, fry the kababs while the rice is cooking, prepare an easy salad and a grand meal is ahead of you. I hope you’ll provides it a try sometimes and savor the deliciousness.

A biryani like fragrant Rice Cooked With Beef (Tehari). a really authentic and traditional meal from Bangladesh.

Recipe type: Main

Cuisine: Bangladeshi, Indian

Serves: 8-10

INGREDIENTS

1 teaspoon cumin

1 teaspoon coriander

2-3 stick of cinnamon, 2 inches each

3-4 green cardamom

5-6 black pepper

½ teaspoon nutmeg

½ teaspoon mace

¾ cup Mustard oil

1 cup Onion, sliced

2 lb Beef, small pieces

2 tablespoon ginger paste

2 tablespoon garlic paste

½ cup yogurt

2 bay leaves

6 cups water

1 cup milk

3 cups basmati or kalijeera rice

8-10 green chilies

Salt, consistent with taste

INSTRUCTIONS

Take cumin, coriander, cinnamon, cardamom, black pepper, nutmeg, mace and grind.

Wash the meat and drain all water.

Take the pot where tehari are going to be cooked. Heat oil on medium flame.

Add thinly sliced onion and saucé until fragrant and golden brown.

Add meat, ginger and garlic paste, yogurt, 1-teaspoon salt, bay leaves and therefore the ground spice.

Cook in less heat for about 25-30 minutes until beef is cooked and tender.

Stir the meat occasionally with little water.

Separate meat keeping the gravy and spices within the pan. put aside meat.

Add remaining water and milk to the pan and convey to boil. Add salt.

Add washed and drained rice and canopy . Once the water boils again, add the entire green chilies and cook in medium heat.

When rice is about half done, add the meat. Mix carefully in order that rice doesn't become smashed and cook covered in medium-low heat.

Turn off stove but keep on heat for 15-20 minutes before serving.

Serve with salad, kabab and chutney.

NOTES

Adjust chilies consistent with taste. don't slit the green chilies. The green chilies should only add flavor to the rice and not make it hot.

Feel free to substitute mustard oil with canola or vegetable oil .

It’s best to use a cooking pot that features a tightly fitted lid for tehari.

The easiest thanks to grind spices is to use a coffee mill .

You can cook tehari in 350 degrees Fahrenheit pre-heated oven for 15-20 minutes after adding the green chilies.

Rajshahi is the beauty queen district of North Bengal. It has a high rate of fresh air among very few countries in the world. A clean, green, and tidy city that has to offer a lot as a tourist spot for food-based travelers especially.

Like other cities of Bangladesh, street food culture is a common culture here among general masses. Now I will share some famous street food of Rajshahi in this blog.

1. Famous Peyara Makhano(Guava Mixture) of T Badh(dam)

Rajshahi is famous for the river Padma. The oldest and most beautiful place on the banks of this river is the T dam.

You may think that why is it called the T dam. The reason for the name of the dam is that the dam is like the English letter T and the reason I am talking about this place is that the Guava mixture sold by some vendors is very popular here. But I alongside most of the people like Mama’s Pickled guava mixture/Peyara Makhano in Bengali.

You might think that a simple Guava Mixture is so popular around here!
Then you must try it first to get the answer all by yourself.
Freshly chopped fresh guava; mixed with a bit of salt, mustard paste, some pickles, and a secret spice – is just amazing. Their behavior is amiable.

You will also find 10 types of pickles, all of which are equally delicious.
Oh yes, if you visit them most often; then they will recognize you very well and when you go the next time, they will start smearing guava as soon as they see you standing.

3. Malai Cha(Tea) of Bornali

A little to the south of Rajshahi’s Nagar Bhaban is the Bernali junction. The tea shop called Sharif Tea Stall along the railway line at this junction is known to all as Bornali tea.

You have to wait patiently for a place to sit properly to enjoy that Tea. It’s the daily scene from the afternoon till 10/11 pm. Although all their teas are delicious, Malai tea seems to be more popular. Half Malai tea consists of half portion of the tea and half portion of Malai mixed and served as a half cup. It costs 50 taka. If you are a Malai lover then the full cup will be better for you. It will cost 100 taka for a cup full of tea.

The cup is filled with 1/3 of the tea and the rest with Malai as if it seems to be overflowing. Oh yes! you will be given a spoon because you can’t eat so much Malai just like that. Extra sugar is poured over Malai, but I like it less sweet avoiding that sugar.
I think their tea is fairly healthy as they wash and clean the cups with hot water every time they make tea.

4. The Chapwala on a van- Near Zero Point

It is difficult to find people who have come to Rajshahi but do not know Zero Point. It is one of the busiest hubs of Rajshahi city. While you are there; just beside this Zero Point & alongside the ATM booth of First Security Islami Bank, you will see a lot of people gathered in a busy afternoon.

At first, you might think as if a small crowd of protesters is gathered there or something bad has happened there. But here is no reason to be afraid/worried as those people are waiting to eat different chops(fried snacks).

Yes! you have heard that right!

They sell a verity of chops. Such as chicken, quail, minced meat, mushroom, coriander, potato, egg, shrimp here. The price is only 5 rupees per piece and I think no one goes without eating less than 10 pieces at least.

I also like their Halim, Piyazi, Beguni, and Puri. However, the one’s that I like most is minced meat and mushroom chops. I eat so much from them that while I go there; as soon as they see me, they put minced meat and mushroom chop on their small palm-sized plastic plate and gives me as soon as possible. That time; everyone else standing there gets a bit surprised to see such a scenario.

You can’t find a single person visiting Rajshahi or people living there who have not eaten/tried this food once. In my opinion, this chop is a must try & one should at least taste it for once.

At the beginning of this blog at first I would like to clarify some basic things about Food Blogging, then I will discuss or give some information about Bangladeshi food habits. Bangladeshi Food Habits:

Bangladesh is a heritage place for a lot of famous food in the world. Similarly, the cuisine of Bangladesh is also the favorite. Important to realize, the foods in Bangladesh is based-on spicy. Not to mention, we will also find various types of desserts which are very tasty and tempted.

In particular, Paratha is eaten in breakfast with Vaji, Lentil or fried eggs and it is very common in Bangladesh. The Nehari – a cooked beef shank items is also eaten with the Paratha. If you visit Bangladesh, you will find Paratha in every breakfast. Important to realize, people of Bangladesh also take Paratha with the desserts. On the other hand, you will find Ruti as the alternative of Paratha.

Bangladeshi Main Dishes:

The dishes which are taken for overcoming appetite are mentioned as Main Dishes. The dishes are commonly made for lunch and dinner. In Bangladeshi restaurants, you will find Kachchi Biriyani, Bhuna Khichuri, or Morog Polao as the main dishes. Another key point, the rice with meat, fishes or vegetables are very common for taking as lunch or dinner for the people of Bangladesh. Let’s see the popular dishes in our country.

Kachchi Biriyani:

Kachchi Biriyani is very delicious and featured food as the main dishes. It is served at the wedding or special party. It is made with special kinds of rice, meat, and potatoes. The named Kachchi comes for the cooking system. In general, the rice and meat are cooked with combination rather than cooking it separately. It is being served with the Salad and sometimes with the chutney. Though the use of Borhani is very common with the Kachchi – a special types of a yogurt drink. If you want to taste Bangladeshi food, you must try Kachchi Biriyani at least one time. Otherwise, you will miss the unique taste of main Bangladeshi dishes.

Bhuna Khichuri

You can cook Bhuna Khichuri as Browning – a particular type of mixing items with rice and lentil. It is the upgraded version of the Bangla Khichuri. Bhuna which is the similar meaning of braised. That means this is a slow cooked food mixing everything together and giving it time to bowl. You can’t understand the taste before eating it. Honestly, it is very delicious and good for eating as the main dishes. In the Bhuna Khichuri, the meet including chicken, beef or mutton (goat) is used with the food and cooked at a time. The Khichuri is served with the Salad, a small piece of onion or  Lemon. When you are visiting Bangladesh, you should take the taste of Bhuna Khichuri because it is one of the authentic items in Bangladesh after Kachchi Biriyani.
